The fruit of a fruitful collaboration, that between the Antica Distilleria Petrone and the University of Naples Federico II , the University of Palermo and the San Raffaele Telematic University of Rome, materializes in the joint research that aims to define the impacts of marine immersion on liqueurs and spirits. During July 2023, for the second time, 450 bottles of Elixir Falernum were immersed at a depth of about 15 meters off the coast of Mondragone.
The results of the first immersion are already available, revealing a marked change in the chemical and physical characteristics of the liqueur. A significant increase of 20% was recorded in the levels of polyphenols and anthocyanins compared to the sample traditionally stored in the cellar. However, the most important transformation emerged in the volatile compounds, with a surprising increase of 60%, corresponding to 55 more units compared to the cellar refinement process. This data reveals a notable enhancement of the sensorial characteristics of the immersed product.
Now we are waiting for the scientific confirmation of the results, in 12 months, at the end of the immersion, the bottles of Elixir Falernum will be analyzed again. The synergic collaboration with universities is one of the key values for Antica Distilleria Petrone, underlining the company's commitment to continuous innovation.
